Martedì 5 febbraio ricomincia Oggi Cucino IO, il corso che Chef Andre ha creato, e dedicato, a ogni Appassionato Cuoco Casalingo. Natale è passato, ma le feste non si fermano: durante il periodo che dal 24 dicembre arriva al 6 gennaio, sono, infatti, tante le occasioni per mettersi a tavola insieme agli amici e ai parenti, e altrettante sono le ricette da condividere in allegria. Noi ve ne abbiamo proposte alcune che ci piacciono particolarmente: il Filetto di Francesco dalla duplice vocazione, le “Saracene”  di chef Andrea , il Frustingo di Daniele, senza dimenticare le Bollicine “En Rouge” di Matteo e il Pandolce di Maurizio*. E, passati Vigilia e Natale, tante sono anche le cose buone avanzate che, con un po’ di creatività, possono essere riproposte in versioni tali da soddisfare anche gli ospiti più esigenti: una scelta “green” che diventa anche “cool” Sono avanzati i tortellini (non cotti)? Lo scrigno bolognese è semplicemente godurioso: lessate i tortellini al dente, conditeli con un buon ragù e besciamella, disponeteli in un involucro di pasta brisèe  con cui avrete foderato uno stampo da timballo, chiudete con un coperchio di pasta tenuta da parte (senza dimenticare il camino) e cuocete in forno a 180° per circa 20 minuti. Fate riposare qualche minuto prima di servire Cappone in esubero? Provatelo in insalata, ma nella pagnotta: tagliate la calotta di una pagnotta adeguata, togliete la mollica e tostatela a cubetti in forno. Tagliate a cubetti il cappone avanzato e mescolatelo con uovo sodo, prosciutto cotto e formaggio a dadini, striscioline di cuore di lattuga e fettine si sedano. Condite con olio evo, limone, sale e pepe bianco, unite i crostini di pane e riempite la pagnotta: il successo è garantito Panettone, come sempre, troppo abbondante? Rivisitatelo creativamente: con le mele cambia aspetto! Disponete le fette di panettone avanzato in una pirofila imburrata e spruzzatele di rum,  frullate  latte con  uova, zucchero ( per circa 300 gr di panettone: 4 uova, 100 gr di zucchero e poco più di mezzo litro di latte), e scorzetta di limone grattugiata. Sbucciate le mele (due o tre a seconda della grandezza per le quantità indicate) tagliatele a fettine e distribuitele sulle fette di panettone. Versate sulla preparazione il composto preparato, distribuendolo in modo uniforme. Infornate a 170° per una mezz’ora, la prova dello stecchino è sempre la migliore, e servite il dolce tiepido dopo una spolverata di zucchero a velo. Buon appetito e ...
